Last Night's Dinner: Vegetable and Tortellini Soup

| Vegetable and Tortellini Soup |
Ingredients:
- Store bought Tortellini
- 1 medium Zucchini or other squash or the vegetables of your choice
- 1 Rib Celery
- 1 Carrot
- 1 Red, Yellow, or Orange Bell Pepper
- 1/2 Onion
- 3 cloves Garlic
- 4 Cups Tomato Juice
- Extra Tomato Juice or Vegetable Stock (or Water if needed for consistancy)
- Salt, Pepper, Italian Seasoning, Parmesan Cheese to taste
Method:
In a soup pot over medium heat sauté the diced Onions, carrot, celery, and bell pepper for a few minutes until they are beginning to soften, add Garlic and cook a few minutes longer. Add tomato juice and stock, vegetables, salt and other seasonings and bring to a boil. Cook so that your vegetables have about 7 minutes (or the cooking time of your tortellini) till done, add tortellini and till done. Adjust liquid content if you want a more soupy soup.
