Vegetable and Tortellini Soup

Ingredients:

  • Store bought Tortellini 
  • 1 medium Zucchini or other squash or the vegetables of your choice
  • 1 Rib Celery
  • 1 Carrot
  • 1 Red, Yellow, or Orange Bell Pepper
  • 1/2 Onion
  • 3 cloves Garlic
  • 4 Cups Tomato Juice
  • Extra Tomato Juice or Vegetable Stock (or Water if needed for consistancy)
  • Salt, Pepper, Italian Seasoning, Parmesan Cheese to taste
Method:

In a soup pot over medium heat sauté the diced Onions, carrot, celery, and bell pepper for a few minutes until they are beginning to soften, add Garlic and cook a few minutes longer.  Add tomato juice and stock, vegetables,  salt and other seasonings and bring to a boil.  Cook so that your vegetables have about 7 minutes (or the cooking time of your tortellini) till done, add tortellini and till done.  Adjust liquid content if you want a more soupy soup.
